One of the most classic interpretations of Albana, the passito is born from the drying of the grapes placed in boxes, at controlled temperature and humidity for at least 60 days. This is followed by the whole grape pressing and fermentation in barrique of the must, the racking and the return of the wine in barrique for at least 12 months before bottling. The smell is intense and with hints of ripe fruit. A long and enveloping sip, balanced by the natural acidity of Albana. Perfect with dry pastries and biscuits, no less interesting pairing with mature and blue cheeses.
