Obtained from the grape Famoso, an ancient autochthonous grape of Romagna, the first historical notes of which date back to the Lugo Municipal Duties of 1437: “Rambëla, table grape sold fresh in the past on the squares”. The aromatic character of this variety makes it particularly versatile. Produced only in the best vintages, the Rambëla passito comes from the selective harvesting of grapes that are put in the cellar, at controlled temperature and humidity for at least 60 days. This is followed by the whole grape pressing and the fermentation in barrique of the must, the racking and the return of the wine in barrique for at least 12 months before bottling. In the aroma emerge the varietal aromatic notes, in particular hints of exotic fruit; the average structure of this grape also brings out notes of botritys formed during the drying phase. Delicate and fine mouthfeel, freshness and great pleasure. Ideal with mature and blue cheeses.
