Obtained from Trebbiano di Romagna vine, a variety widespread in our territory. The grapes are harvested belatedly, in slight presence of botrytis. The must is then fermented in spent barriques and partly in steel, a small addition of Trebbiano from an earlier early harvest and a long aging on fine lees in steel tanks. A wine of surprising body and complexity, whose best matching with the recipes of Cappelletti Romagnoli in broth and passatelli.
