Made from white grapes of the Albana variety, queen of Romagna. When the alcoholic potential of 13.5% has been reached, the grapes are harvested manually and kept in the press for 8-10 hours for a quick maceration. After pressing, the must is cleaned by cold, static defecation and inoculated. The wine is then fermented at a controlled temperature, aged for 6 months on fine lees in steel tanks and for a further 5 months in the bottle. We obtain a wine with a better balance that reflects the typical characteristics of Albana, where acidity and body blend well in a long and full sip.
